Turmeric & Ginger Marinade

Makes approximately 150ml


2 stalks lemongrass, outer leaves, base and top stalk discarded

2 tsp ground turmeric

1 thumb sized piece of ginger, peeled and finely chopped

2 tsp lime zest

1 tsp ground coriander

2 tsp palm sugar

6 tbsp coconut milk

1 ½ tbsp light soy sauce

2 tsp fish sauce (remove if vegetarian / vegan)


Finely chop or bash, using a mortar and pestle, lemongrass, turmeric, and ginger, then tip into a mixing bowl. Add the lime zest, ground coriander, palm sugar, coconut milk, soy sauce, fish sauce (if using) and peanuts and whisk to combine.
