Ingredients
200g leftover Banh Mi mix
100-200g kale / spinach / any leftover green vegetables, finely chopped
salad of your choice on the side
Preparation
Finely chop the greens and add them to the leftover Banh Mi mix. Massage well together to form a uniform mix. Using wet hands (which helps prevent meat mixture from sticking to your hands) divide the meat mixture into small, golf-ball sized pieces.
To pan fry, heat 1 tbsp avocado oil or vegetable oil in a frying pan to a medium-high heat and sear well on one side for 3-4 minutes. Turn once and then fry the other side.
To serve: with a salad of your choice on the side.
