1 green mango, peeled and shredded
1 cucumber, halved and thinly sliced
2 spring onions, thinly sliced
1 cup fresh Vietnamese mint leaves
1 cup fresh coriander leaves
½ cup fresh Thai basil leaves
The Chilli Lime Dressing
1 large red chilli, finely chopped
6 cherry tomatoes, halved
1 tbsp dried shrimp
2 tsp palm sugar
2 tbsp fresh lime juice
1 tbsp fish sauce
Preparation
Place the mango, cucumber, spring onion, mint, coriander, thai basil in a large mixing bowl.
The Chilli Lime Dressing
Place the chilli, dried shrimp and palm sugar into a pestle and mortar and pound into a paste. Now add the tomatoes and gently pound until the juices begin to run. Lastly, stir in the lime juice and fish sauce. Pour as much or as little of the dressing over the sliced veg, and fruit mix together. Serve.
