Ingredients
The Marinade
1 ripe papaya
4 garlic cloves
Small handful of coriander stalks
1 tbsp palm sugar
1 tbsp fish sauce
1 tbsp light soy sauce
1 tbsp oyster sauce
1 tsp white pepper
100ml coconut water
Garnish
1 fresh lime
Large red chillies
Preparation
Place all ‘The Marinade’ ingredients together into a food processor and blitz the ingredients until a smooth liquid / paste has formed.
Finely slice the pork fillet and place into a mixing bowl and pour ‘The Marinade’ over the sliced pork. Massage the marinade well into the pork, cover the bowl and place in the fridge for a minimum of 2 hours or ideally overnight.
Skewer the pork slices with bamboo skewers.
Cooking
Grill the pork skewers for 3–4 minutes on both sides on a high heat on a griddle pan, barbecue or frying pan. Serve with a squeeze of lime and fresh chillies to garnish.
